
Duck soup

Step 1
First, preheat the oven to 220 degrees. Place the duck pieces onto a baking sheet lined with parchment paper. Brush with oil and sprinkle with salt and spices. Roast the duck pieces for 35–45 minutes, until fully cooked.

When the duck is ready, you will need to place it in a large pot. Add the chicken bouillon cube, ginger sliced into rounds, mushrooms, pepper, bay leaf, star anise, and water.

Stir everything thoroughly, cover with a lid, and cook over medium heat for 45 minutes. The soup should come to a boil, after which we reduce the heat to the minimum.

Remove the meat from the soup, discard the bones, and return the meat to the soup. Heat a small amount of olive oil in a hot skillet and sauté the minced garlic and leek until soft. Add this sautéed mixture to the soup, then add sugar, sherry, and cook until done. Just before finishing, add the Brussels sprout leaves to the soup. Duck soup is ready.
