
Soup with tomato paste
Description
Here is a recipe for soup with tomato paste. I think you'll enjoy this dish, as it turns out both hearty and light at the same time. In summer, I even prepare it to cool completely and serve it cold, similar to gazpacho—although, of course, this tomato paste soup differs from traditional gazpacho. When served hot, it becomes more spicy and rich, yet incredibly delicious as well—do try it. Serve the soup hot.

1. In a saucepan or small pot, heat the oil and sauté the chopped onion.

2. When the onion becomes golden, add the paste and wait until it darkens. Then quickly pour in the broth, mix everything, and add chopped basil, tomatoes, and all the specified spices. Cover with a lid and bring to a boil over low heat.

3. Now blend everything together in a blender until it reaches a paste-like consistency, then return it back to the saucepan. This time, also add sour cream. Bring to a boil again over low heat.
