
Cheddar Cheese Soup

Prepare the ingredients.

Dice the onion, and coarsely chop the garlic.

Peel the potatoes and cut them into cubes.

In a heavy-bottomed pot, heat the olive oil over low heat. Add the onion and garlic, and cook until fragrant and the onion becomes translucent, about 3-4 minutes, stirring constantly and being careful not to let it brown.

Add dried thyme, salt, and pepper to the potatoes. Mix well to coat the potatoes with oil and heat for a couple of minutes. This will help the vegetables and spices reveal their flavors more vividly.

Pour in the hot broth and bring the soup to a boil.

Reduce the heat and cover the soup with a lid.

Boil for 15-20 minutes, until the potatoes are soft.
