
Soup with dried mushrooms
Description
The recipe won't take much time. The combination of dried and fresh mushrooms with cream is a classic that will surely delight you. You can use vegetable, mushroom, or meat broth as a base. I don't recommend using just water, as the soup will have a much richer flavor with broth. It's light, so it's perfect even for a summer menu. Remember the recipe: ladle into bowls and serve.

1. Place the dried mushrooms in a deep bowl and pour 3 cups of very hot water over them. Let them soak for half an hour.

2. Then, using gauze or a coffee filter, strain the mushrooms. Keep one glass of the mushroom liquid.

3. Melt 3 tablespoons of butter in a saucepan and sauté the chopped onion with garlic.

4. Add fresh mushrooms and sauté for a few more minutes.

5. Place the dried mushrooms in a saucepan and simmer over low heat for 10 minutes.

6. Pour in the dry wine. After 3 minutes, add the remaining butter.

7. As soon as the butter has melted, add the flour and stir gently for a couple of minutes.

8. Pour in the broth and the mushroom soaking liquid. Add salt and spices. Simmer the soup over low heat for about 20 minutes.

9. Finally, pour in the cream, heat slightly, and the soup with dried mushrooms is ready to serve, optionally garnished with fresh herbs.
