Description

Hearty and aromatic soup. I'll be honest — initially my family resisted eating this soup, but now its appearance on our table is met with full approval. Both children and adults enjoy it. By the way, it's especially recommended for adults, as it's one of the quickest "hangover cures" available. In old Russia, such rich, fragrant soups were called "pokhmelka" and eaten the morning after to recover from, well, you know what. So this simple soup recipe with pickled cucumbers should definitely be in every cook's repertoire — men especially should pay close attention! In emergencies, it can be prepared in just half an hour, and after a bowl of this soup, you'll head back to conquer new work challenges with renewed energy!:) The soup is ready to serve.

    Peel and finely chop the onion.

    And carrots.

    And, of course, cucumbers.

    Over high heat, fry the bacon or fat until golden brown, then add finely chopped sausages, ham, etc.

    Add the onion and carrots, sauté while stirring constantly until the vegetables turn golden. Add the tomatoes or tomato paste, season with salt and pepper, mix well, then cover and let stand off the heat.

    Finely chop the potatoes.

    Put the bay leaf, potatoes, and other vegetables (if you decided to use them) into a saucepan with boiling salted water. When the water boils again, add the sautéed mixture, stir, and simmer over low heat, covered.

    Add cucumbers to the pot 5-7 minutes before completion. Serve the ready soup seasoned with minced garlic and finely chopped herbs. Enjoy hot with cold sour cream ;)
