
Shiitake Mushroom Soup
Description
Shiitake soup is not a traditional Eastern dish. Rather, it's my personal improvisation on an Eastern theme—I took typical Eastern ingredients like soy sauce, chili pepper, fish sauce, and of course shiitake mushrooms, and made a rather light and tasty soup. A great option for a weekday lunch. Serve the soup hot.

Step 1

First of all, dried shiitake mushrooms need to be soaked in warm water for 30 minutes until they soften.

We wash and peel the carrot, then cut it into thin strips.

Slice the kohlrabi in the same manner.

Shred the cabbage and celery.

Bring the beef broth to a boil, add carrot and kohlrabi cut into julienne strips, as well as sliced mushrooms. Cook for 5-8 minutes, then add all the remaining ingredients to the soup.

We cook for another approximately 5-10 minutes—until the vegetables are done, depending on the thickness of the cut. Then we discard the chili pepper and immediately serve everything.
