
Soup with mushrooms and chicken

Place chicken thighs in a saucepan and pour in 1.2 liters of water. Add half a teaspoon of salt and a bay leaf, set over high heat and bring to a boil. Then reduce the heat, skim off the foam, and cook covered for 30-35 minutes, until the chicken is done. Strain the prepared broth, remove the chicken thighs and let them cool.

In another saucepan, pour vegetable oil and add finely chopped onion. Fry the onion for 5 minutes, stirring constantly.

Add dried thyme and thinly sliced mushrooms to the onions, and sauté for 7 minutes. Then add flour to the pot and cook for another minute. Next, pour in the broth, season with salt, bring to a boil, and simmer over low heat for 10 minutes.

Cut the meat into small pieces (remove skin and bones) and transfer to a saucepan. Add the cream, bring the soup to a boil, then remove from heat.
