A hearty first course. I really love this bacon pea soup recipe. It takes quite a while to prepare, but it's worth it. My grandmother always told me that pea soup is very healthy! It should be noted that peas are highly beneficial, which has been known since ancient times.     Peas are covered with cold water for 2-3 hours, or preferably overnight.

    Cut the fat (preferably with meat layers) into thin strips and fry in a pan until golden. Leave the fat in the pan.

    Peel the onion and slice into rings; peel the carrot and slice as well. You can cut the vegetables in any way you prefer.

    In the remaining fat from the lard, sauté the onion until golden, then add the carrots.

    Pour water into a saucepan. Add the soaked peas. Cook for about 40 minutes, skimming off the foam. Then reduce the heat and add the fried bacon and vegetables. Meanwhile, peel the potatoes and cut them into small cubes. Add the potatoes and cook the soup for another 15 minutes. Season with salt and pepper, add fresh herbs.
