Description

Perfect for lunch. This light yet very filling soup with rice and vegetables is cooked for 1.5 hours using poultry broth—in this case, quail. All vegetables are used to taste, so feel free to experiment. For example, you can add green peas or corn, broccoli or zucchini. Add fresh herbs at the end or just before serving. The soup is ready to serve.

    1. I cooked this soup with rice and vegetables for my two-year-old child, but my family also really liked it and happily ate it for lunch. I made the soup with homemade quail, but you can use any poultry or other meat. First, prepare the broth, then add all the remaining ingredients.

    2. Finely chop the vegetables and add them to the soup. I used two types of bell pepper: red and green (not only for taste, but also for color).

    3. While the vegetables are cooking, slice the potatoes into thin strips and rinse the rice several times. Instead of rice, you can use any grain you prefer.

    4. Slice the zucchini or courgette and add it to our soup.

    5. Add the potatoes, cauliflower, and rinsed rice to the same pot. Break the cauliflower into florets, and cut them if they are too large.

    6. Bring the soup to a boil over medium heat, then reduce the heat and simmer gently until done. Add the chopped herbs at the very end. On average, vegetable and rice soup takes 1.5 hours to prepare (including broth preparation). I usually remove the meat and place it directly into the bowl before serving.

    7. Quail cooks quickly (just like chicken) and is very easy to carve. Let the soup steep for about 15 minutes after cooking, then serve.

    8. Look at the beautiful soup we've got. As you've noticed, there's no fried roux, and all the vegetables are added raw. Here's a little tip: add the onion, carrot, and bell pepper while the meat is cooking (after it's been simmering for about 20 minutes), and at the end, add fresh herbs and a bit more bell pepper.

    9. Instead of rice, you can use any grain you prefer. I've cooked this soup with oatmeal according to this recipe, and it turned out amazingly delicious!
