
Turnip Soup
Description
The recipe won't take much time. I'd like to point out right away that you can cook this soup either in water—as the peas will provide a wonderful aroma and flavor—or in meat broth, for example. As for other vegetables, you can also add them if desired: onion, garlic, sweet pepper, potatoes, etc. This is a great dish for the whole family, definitely worth trying.

1. The base of this soup will be peas. They need to be thoroughly rinsed and soaked in water in advance (preferably overnight). However, adjust according to the quality of your peas.

2. Bring clean water or broth to a boil (you can use either meat or vegetable broth). Add the peas and cook over medium heat until tender. Add bay leaf and other spices to make the broth more flavorful.

3. Peel and julienne the carrots and turnips.

4. Heat vegetable oil in a skillet. Add the vegetables and sauté over medium heat, stirring, for about 3 minutes. Add spices: pepper, coriander, and others.

5. When the peas reach the desired consistency (some prefer them very soft, others firm), add the sautéed vegetables to the pot. Season with salt to taste.

6. Simmer over medium heat for about 7-10 minutes, then remove from heat and let stand, covered, for another 15 minutes. Before serving, you can add croutons or fresh herbs to the soup bowl.
