
Radish Soup
Description
Perfect for lunch. You can use any radish for the soup. The stronger its flavor, the more piquant the soup will turn out. Be sure to sauté the flour—it will add a nutty taste and prevent lumps.

Prepare all the necessary ingredients for making radish soup.

Peel the onion and finely chop it. Pour vegetable oil into a frying pan and add the chopped onion. Fry over medium heat for 5 minutes, stirring, until cooked.

Sprinkle the onion with flour, mix and fry for another 2 minutes. Pour in hot water and stir.

Set aside a few radishes, grate the rest on a coarse grater, and place in a saucepan. Pour into it the liquid with the sautéed onions from the frying pan.

Simmer the soup over low heat for 5 minutes after it comes to a boil, stirring occasionally. Remove from heat. Pour into bowls, add finely chopped herbs and diced reserved radish.
