
Soup with quail, Brussels sprouts, and potatoes

Hearty and aromatic soup. Recipe for soup with potatoes, Brussels sprouts, and quail. Quail meat combined with vegetables turns out delicious. If quail is not available, it can be replaced with chicken fillet.

1. Cut the quail carcasses in half and rinse. Place in a pot and cover with cold water. After the water comes to a boil, simmer for about fifteen minutes.

2. Slice the leek into small rings (if using onion, chop it finely).

3. Peel the potatoes, cut them into small cubes, and add them to the broth with the quails. Bring to a boil.

4. Now add the Brussels sprouts here. Season slightly with pepper and salt. Cook for ten to fifteen minutes.
