
Soup with vegetables and meat
Description
A hearty first course. Actually, this soup can be prepared with various vegetables based on any broth. I prefer it made with beef broth—beef is not too fatty and has no strong odor, yet the soup turns out rich and flavorful. To prepare the vegetable and meat soup, we'll need a piece of beef, preferably with some fat or a bone. See the recipe below. Serve the soup hot.

Rinse the meat and cut it into pieces.

Brown the meat in a skillet with spices.

Then transfer the meat to a pot, simmer to make broth, remember to skim off the foam. Add onion for aroma.

Wash and chop the vegetables: cut the carrots into strips, the potatoes into cubes, and so on.

First add the potatoes, then the cauliflower.

Sauté the chopped carrots, onion, and celery, and add to the soup.

Add peas 5 minutes before the end.

Add the bay leaf and simmer for another 5–7 minutes. Serve the ready soup with vegetables and meat hot, straight from the pot.
