
Noodle soup
Description
A hearty first course. When I cook this soup, the aromas spread throughout the entire apartment, drawing my husband or kids to the kitchen. And for good reason! The noodle soup turns out simply unforgettable—light yet filling. You can add potatoes to the soup. I don't use them, but you can if you'd like. The taste won't change, the soup will just become a bit thicker. Let me share my recipe with you.

Pour water into a saucepan, add chicken, ginger, and garlic.

Bring to a boil and simmer over low heat for 20 minutes, until the chicken becomes tender.

Remove the chicken and separate the meat from the bones. Return the meat back to the broth.

Add noodles, corn, mushrooms, and half of the green onions to the pot. Cook for 3–4 minutes, until the noodles are done.

Pour into bowls and add the remaining onion, herbs, and chili pepper. Also drizzle with soy sauce.
