
Soup with chicken offal
Description
Hearty and aromatic soup. This very light, almost diet-friendly soup will give you a boost of energy and vitality for the whole day. Besides, chicken offal is very nutritious. You can prepare this soup in an even lighter version—without potatoes—or substitute rice with noodles. The more greens you add to the soup, the more fragrant it will be.

Rinse the giblets, clean the stomachs and remove the membrane. Place the giblets in a pot, add 1.5 liters of water, and simmer over low heat for about an hour, avoiding vigorous boiling. Skim off the foam.

Peel the vegetables. Cut the potatoes into cubes, grate the carrots on a coarse grater, chop the onion into small cubes, and slice the garlic into thin rounds.

Put all the vegetables in a frying pan and fry in vegetable oil until golden brown.

Add potatoes and salt to the ready broth and cook for another 15 minutes.

Next, add the fried vegetables and rice to the soup, and let it simmer for another 5 minutes.
