
Soup with chicken meatballs and vegetables
Description
A hearty first course. This light, tasty, and simple soup with chicken meatballs takes less than an hour to prepare. It will be even faster if you already have prepared ground meat—in this recipe, it's ground chicken. Soups can be made with various grains or pasta; choose according to your preference. If adding grain, add it earlier, and then the meatballs. For pasta, do the opposite. And don't forget the fresh herbs.

1. Peel the potatoes, cut them into cubes, cover with water, and place over heat. Bring to a boil, skim off the foam, add salt to taste, and reduce the heat. While the potatoes are cooking, prepare the meat mixture for the meatballs.

2. I had 2 drumsticks, which I turned into minced meat. If you don't have time but already have ready-made minced meat, even better! This soup will take only 40 minutes to prepare.

3. Add finely chopped onion, salt, and spices to taste to the minced meat. Shape small meatballs using your hand and a teaspoon.

4. Drop the meatballs into the boiling soup one by one, and don't forget to reduce the heat.

5. Now make the sauté: melt the butter over low heat, add finely chopped onion, and fry, stirring constantly.

6. Add the carrot, cut into strips, to the onion. Fry until golden, then add to the soup.

7. Add bell pepper (sometimes I also add zucchini and cauliflower).

8. Meatball soup goes very well with pasta. I was cooking soup for a child, so I added small pasta pieces. If you prefer grains, you can cook the soup with buckwheat or rice. The cooking time and when to add the pasta depend on their size. For instance, tiny pasta should be added at the very end. If using larger pasta, add them right after the meatballs start boiling.

9. From the greens, I had onion and parsley, and from spices — only bay leaf and ground black pepper. I didn't add anything else.

10. Add the herbs at the very end, then bring the soup to a boil and turn it off.
