
Chicken soup with carrots, celery, and dumplings

1. Make the dumplings. In a large bowl, mix flour, baking soda, and salt. Using a fork, blend in vegetable shortening. Add ice water and stir to combine.

2. Knead the dough by hand, form a small disc, wrap it in plastic wrap, and refrigerate for 2 hours in the refrigerator (or 30 minutes in the freezer).

3. Roll out the chilled dough on a lightly floured surface to a thickness of at least 6 mm. Cut the dough into rectangles 1 cm wide and 5 cm long. Set aside.

4. Peel the carrots and celery and slice them into rounds. Finely chop the onion. In a large pot, melt the butter over high heat. Add the onion and vegetables, stirring to combine. Reduce the heat to medium and cook, stirring occasionally, for about 7 minutes, until the vegetables soften. Stir in the thyme and minced garlic, and cook until fragrant, about 30 seconds. Add the flour and stir to coat all the vegetables.

5. Increase the heat to high and slowly add 1 cup of chicken broth, stirring constantly. Repeat with the second cup of broth. Add the remaining broth gradually, stirring constantly to prevent lumps. Add the bay leaf, reduce the heat to medium, and cook for 10 minutes, stirring occasionally.

6. Add chopped chicken or turkey meat. If using raw meat, cook over medium heat for 10 minutes. Otherwise, bring the soup to a boil.

7. Add the dumplings and stir to prevent them from sticking together. Reduce the heat to medium and cook for 10 to 20 minutes, depending on the thickness of the dumplings.
