
Chicken soup with noodles, millet, and bacon

Prepare the listed ingredients. You can use any part of the chicken carcass, as well as any type of bacon: salted, smoked, fresh, etc.

Cut the chicken into pieces or use pre-cut pieces. Rinse them under water, place in a pot, and cover with water. Add bay leaves and put the pot on the stove. Boil for 40 minutes, remembering to skim off the foam with a ladle. If using pieces of broiler chicken, boil for 20 minutes.

Rinse the millet several times in water to remove the bitterness from the grain. Otherwise, it will make the soup taste bitter!

Peel the potatoes, carrots, and onion. Cut the potatoes into medium cubes, grate the carrots, and finely dice the onion. Add the chopped vegetables and rinsed millet to a saucepan. Simmer over medium heat for 15 minutes.

Cut the bacon into slices or cubes and add to the broth together with the noodles. Boil for about 5-7 minutes.

Add salt and ground black pepper. Rinse the parsley or dill greens and chop them, then add to the pot and mix. Simmer the soup on the stove for another 1-2 minutes and taste it. Adjust seasoning to your taste if necessary.
