
Shrimp soup
Description
A hearty first course. I still remember the first time I tried a similar shrimp soup at a Chinese restaurant. I tried to recreate it at home, but it turned out completely different and not very tasty. Later, however, a good friend of mine, who works as a chef at another Chinese restaurant, shared with me the proper recipe. This shrimp soup, made with the correct recipe, turned out absolutely delicious, and now I prepare it regularly. I wish you the same success :) Serve with fresh herbs and sour cream.

Here are our ingredients, actually.

Finely chop the onion and garlic, leave the pepper whole.

Place the shrimp shells (set the meat aside for now), onion, garlic, ginger, and pepper into a frying pan. Simmer over low heat for about 10 minutes.

Then add chicken broth and simmer for another 15 minutes over low heat.

Peel the tomatoes and cut them into small cubes.

Strain our soup. Keep the broth—that's what we need—while the vegetables and shells can be discarded; they've done their job.

Place the shrimp broth over heat, add diced tomatoes, and simmer over low heat for 15 minutes.

After 15 minutes, add coconut milk to the soup.

Next, add the shrimp to the soup and pour in the lemon juice. Cook for another 5 minutes, then remove from heat.

Serve, of course, hot.
