
Celery root soup
Description
Hearty and aromatic soup. This soup is quite an interesting dish. Thanks to the white wine, it acquires a wonderful aroma and excellent, original flavor. Don't worry about adding alcohol to the soup—the alcohol evaporates during cooking, leaving behind only a delicate fragrance. This celery root soup can be enjoyed by both adults and children. Keep in mind that the listed ingredients yield a large quantity of soup, so you may proportionally reduce the amounts. The soup is ready to serve.

Step 1
Pour oil into a large pot, enough to cover the bottom. Add the onion sliced into half-rings. Sauté until slightly golden. Add a pinch of salt.

Dice the peeled celery root into small cubes. Add it to the onion. Season with salt.

Peel the apples and remove the cores. Slice them thinly and add to the pot five minutes after the celery root. Cook for another three minutes, stirring constantly.

Add crushed garlic, cayenne pepper, white pepper, and tarragon sprigs. Mix well.

Pour in the wine and increase the heat to maximum. Wait until all the liquid has evaporated. Add water, season with salt, and bring to a boil over low heat. Cook until the celery root becomes tender.

Remove the bay leaf and tarragon sprigs. Pour the soup into a blender and blend until smooth. If the mixture is too thick, add some boiled water.

Pour the ready soup into bowls, garnish with tarragon leaves and drops of olive oil.
