Soup with smoked pork ribs for warming up

    1. Prepare the ingredients for the soup. I don't specify the amount of water, as you can adjust the soup's thickness to your taste. Sort the beans, soak them for a couple of hours in cold water, then change the water to fresh and cook the beans until tender. Do not salt the beans.

    2. Wash and peel the vegetables. Cut the potatoes into cubes, finely chop the onion and carrots. Mince the garlic with a knife—do not use a garlic press, as it will simply burn in the pan. Bring the water or broth for the soup to a boil. Sauté the vegetables in vegetable oil until cooked through.

    3. Add the chopped ribs, potatoes, and beans (previously drained from the water they were cooked in) to the boiling water (or broth). Cook the soup for 25 minutes.

    4. Add tomato paste to the cooked vegetables and heat for a couple of minutes in the pan.

    5. Add the fried vegetables with tomato paste, bay leaf, peppercorns, and salt to the soup. Bring to a boil and remove from heat.

    6. The soup is ready! Let it steep for about 10-15 minutes, then ladle it into bowls and add herbs, sour cream, and a few pinches of black or red pepper to each. Enjoy!
