
Soup with sausage and sweet potatoes
Description
Perfect for lunch. Treat yourself to an unusual light soup with a sweet-smoky flavor. Serve with herbs and sour cream.

Step 1

1. Slice the sausage and potatoes into small slices. Chop the onion and press the garlic.

2. Heat 2 tablespoons of oil in a large pot over high heat. Add the sausage and cook until browned, stirring frequently, for about 8 minutes. Transfer the sausage to paper towels to drain excess fat.

3. Add onion and garlic to the pot and cook until translucent, stirring frequently, for about 5 minutes. Add sweet and regular potatoes and cook until tender, stirring frequently, for about 12 minutes. Add chicken broth and bring to a boil. Reduce heat to low, cover and simmer until potatoes are soft, stirring occasionally, for about 20 minutes.

4. Using a potato masher, mash some of the potato slices. Add the sausage slices to the soup. Add the spinach and cook for about 5 minutes.

5. Stir in the remaining 1 tablespoon of butter. Season with salt and pepper. Divide between plates and serve.
