Soup with anchovies in tomato sauce with noodles
Description
The recipe won't take much time. To make the soup more filling, I added vermicelli, but you can use any pasta. You may also use millet or rice, though in that case the soup will require longer cooking. Fresh herbs and garlic will give the dish a special flavor and unique touch. This bright, aromatic, and easy-to-make fish soup is perfect for quickly diversifying your everyday menu. An excellent choice for a fast lunch or dinner for the whole family. For all the cooking details, read the recipe. Serve the soup hot.
Instructions
- 1
Step 1

Prepare all the ingredients. You can use any pasta you prefer.
- 2
Step 2

Cut the potatoes into small cubes or strips, whichever you prefer. Place the chopped potatoes and a bay leaf into a pot with water or broth. Bring to a boil, then reduce the heat and simmer the potatoes, covered, until tender.
- 3
Step 3

Mash the herring in tomato sauce with a fork. Do not make the fish pieces too small, otherwise they will turn into mush during cooking and spoil the appearance of the finished soup.
- 4
Step 4

Heat a small amount of vegetable oil in a frying pan. Finely chop the onion and grate the carrot on a coarse grater. Alternatively, the carrot can be sliced into thin rounds or half-rings. Add the onion and carrot to the pan and sauté. Stirring, cook over high heat until desired doneness.
- 5
Step 5

When the potatoes are almost ready, add the contents of the frying pan.
- 6
Step 6

Next, add the pasta. Leave on the stove until the pasta is fully cooked.
- 7
Step 7

At the end, add the kipper in tomato sauce and chopped garlic. Adjust the seasoning with salt, cook for a couple of minutes, then remove from heat.
- 8
Step 8

The anchovy and tomato soup with noodles is ready. Let it steep for a while and serve.
- 9
Step 9

Pour onto plates and serve.
