
Soup with kale, potatoes, and Italian sausage
Description
The recipe won't take much time. This delicate creamy soup is perfect for cold weather. Serve the soup hot.

1. Rinse the kale under cold running water and tear into small pieces. Drain in a colander and set aside.

2. Slice the potatoes thinly. Chop the onion. In a medium pot, boil the sliced potatoes until cooked. Drain the water from the potatoes and set aside.

3. In a large pot, cook the Italian sausage in a small amount of olive oil until browned, breaking the sausage apart with a spoon. Drain the excess fat.

4. Add red pepper flakes and oregano.

5. Pour in the chicken broth, milk and milk mixed half-and-half with cream. Stir and cook for 30 minutes. Add salt and seasonings as needed.

6. Add boiled potatoes, heavy cream, and kale, mix well.

7. Simmer for an additional 10–15 minutes, then serve. If you'd like a thicker soup, you can add a little flour mixed with milk and boil it over low heat for 10 minutes.
