Perfect for lunch. This recipe for buckwheat soup with pickled cucumbers allows you to serve a finished dish in just 2 hours of cooking. If you prefer meatless soups, you can remove the meat from the broth and save it for another dish. For extra flavor, add warm pickle brine to the soup during cooking. The soup is ready to serve.

    Rinse the pork in cold water. Cut it into small pieces. Add to a pot of water and cook until done.

    Sort through the buckwheat groats. Remove any stems and dark grains, rinse in a bowl of water, and drain through a colander. Peel, wash, and chop the potatoes.

    Peel the onion and slice it into half-rings.

    Peel the carrots, wash them in cold water, and grate them.
