
Beef and zucchini soup
Description
The soup is easy and quick to prepare. This delicious soup will keep you warm on cool days, nourish your body, and fill you with great mood for further work. Serve it with croutons, toast, breadsticks, lavash, etc. Serve with fresh herbs and sour cream.

Prepare the listed ingredients. Instead of green onions, you can use regular onions, red onions, etc.

Rinse the beef in water, remove the films and tendons, and cut into portion-sized pieces. Place in a pot together with bay leaves. Pour in water and cook the meat for about 1 hour, making sure to skim off any foam that forms. After boiling, reduce the heat to moderate.

Meanwhile, peel the potatoes and carrots, and trim the ends off the zucchini. Rinse the vegetables and cut them into medium cubes.

Add the chopped vegetables to the pot with the boiled beef. Add salt and ground black pepper. Cook for about 15–20 minutes, until the potatoes are done. At the very end, finely chop the washed green onions and dill, add them to the pot, cook for another 2 minutes, then turn off the heat.
