
Soup with glass noodles and mushrooms

Prepare all the ingredients.

Wash the carrots, peel them, and grate on a Korean-style carrot grater. Slice the onion into half-rings. Wash the mushrooms or wipe them with a damp cloth if they are not heavily soiled. Slice them into pieces.

Heat a skillet with vegetable oil and sauté onion with carrot for 3-4 minutes.

Then add the mushrooms and cook everything together for another 6-7 minutes.

Pour the soy sauce into the pan, add the minced garlic. Cook for another 3-4 minutes.

In a saucepan, bring water to a boil. Add miso paste and stir until dissolved.

Add the sautéed vegetables with mushrooms to the pot. Season with salt and pepper to taste. Simmer the soup for about 5 minutes.

And fresh spinach. You can chop it beforehand if the leaves are large. Remove the pot from the heat, cover with a lid, and let the soup steep for 15–20 minutes. During this time, the noodles will finish cooking as well.
