Quick and Easy Meatball Soup

Description

Hearty first course. A quick meatball soup will save you when you need a fast lunch or have hungry guests at the door. With any ground meat on hand, this soup takes only half an hour to prepare. Vermicelli is used in this recipe, as grains take longer to cook. Don't forget to add fresh herbs and ground black pepper before turning off the heat.

    1. Peel, wash, and dice the potatoes, cover with water, and place over heat. Bring to a boil and add spices to taste. While the potatoes are cooking, our next task is to quickly prepare the meat mixture for the meatballs.

    2. I had some homemade minced meat left over from last time (I always set aside a bit of minced meat for meatballs when grinding meat). Add grated onion (half a medium onion), salt, spices, and a quail egg (since there's not much minced meat, a chicken egg would be too much; if you don't have a quail egg, don't add any egg at all, just beat the minced meat well). Now mix everything thoroughly, patting the meat mixture to make it uniform.

    3. When the potatoes have been cooking for about 5 minutes, add the chopped onion and carrots, as well as the pepper. If time permits, you can sauté the vegetables in vegetable oil for a bit. I was preparing this quickly, so I skipped frying them, plus it's still unhealthy for my child. This way, the soup turns out quite nutritious and delicious.

    4. Now form the meatballs and place them into the boiling broth. Make them any size you prefer.

    5. Cook until the potatoes and meatballs are done, and at the very end add a couple of pinches of vermicelli or pasta.
