
Chicken broth soup with meatballs

Hearty and aromatic soup. Having soup for lunch is an unwritten rule, but not everyone—adults or children—always feels like eating a first course. Nevertheless, meatball soup is loved by many, and there are countless recipes for it. I offer a simple recipe for meatball soup made with chicken broth. Rich, satisfying soup with tender meatballs in chicken broth will surely please both children and adults. Ladle into bowls and serve.

Wash the chicken thighs and remove the skin and bones. Then grind the meat in a meat grinder until it becomes minced meat, add salt and pepper to taste. Mix thoroughly and refrigerate for 1 hour. Meanwhile, quickly cook a broth using the bones and skin.

Meanwhile, we will peel and finely chop the onion, cut the cleaned pepper (without seeds) into strips, dice the peeled tomato, and slice the carrot and celery into rounds.

Bring the minced meat from the cold, shape it into small meatballs.

Strain the cooked broth and bring it to a boil. Add the meatballs to the boiling salted broth and cook for about 5 minutes.

Remove the finished meatballs from the pot and let them sit in a covered dish. Keep the ready chicken broth on the lowest heat.

We cut the peeled potatoes into strips and add them to the chicken broth. Add the fine noodles to the broth as well.

Meanwhile, add onion and carrot to a heated pan with vegetable oil and sauté for about 5 minutes, stirring.

Then add the chopped tomato and spices (ground black pepper), simmer for another 3 minutes.

Transfer the contents of the skillet into the broth, adding celery and bell pepper as well. After a few minutes, add the meatballs. Simmer over low heat for about 5 minutes, making sure the soup does not boil but only gently bubbles. Add finely chopped herbs, then let it steep for 10 minutes.
