
Meatball soup from minced meat
Description
A hearty first course. In this case, the meatballs are made from minced chicken, but you can use regular meat mince as well. Semolina gives the mince a denser texture, but it won't affect the taste—trust me. By the way, if you prefer richer soups, prepare a broth in advance. As for other additions, everything depends on your taste. I made a light soup with vegetables and peas, but you can add your favorite grain or, for example, noodles. Serve with fresh herbs and sour cream.

1. Melt the butter in a saucepan and sauté half an onion in it, finely diced.

2. Peel and chop the carrots. You can grate them or slice them—whichever you prefer. Pour clean water or broth into a pot and add the carrots.

3. Peel the potatoes, cut them into cubes, and add them to the pot. Season with salt to taste and add your favorite spices.

4. While the vegetables are boiling, you can prepare the meatballs. Place the ground meat into a bowl, add chopped onion and herbs, salt and spices to taste. Crack in an egg.

5. Mix everything and add the semolina. Shape the ready mince into small meatballs. Add them to the soup when the vegetables are almost cooked.

6. Immediately after the meatballs, add the peas and cook for another 5-7 minutes.

7. Remove from heat, add chopped herbs to taste, and serve.
