
Soup with meatballs and vermicelli
Description
A hearty first course. The soup with meatballs and vermicelli turns out rich and filling. My children especially love it, probably because of the tender, soft meatballs and the noodles. My kids love all kinds of pasta. I recommend adding spinach to the soup right before serving. Although any other greens—dill, parsley, or cilantro—will work just as well. I'm sharing the recipe. Ladle into bowls and serve.

Finely chop the onion. Very finely. Mix the onion, ground beef, and egg together, season with pepper and salt to taste.

You will get a soft, pliable mince. Roll it into meatballs.

Pour water into a pot, one or two liters, depending on how thick you want the soup to be. Add salt. Then add all the meatballs to boil.

When the meatballs are cooked, add the vermicelli and oats. They cook very quickly, so the meatballs won't have time to fall apart. Salt, pepper, and you can add your favorite spices, but don't overdo it.

Garnish the ready soup with meatballs and noodles with fresh herbs. I recommend using spinach—it's a very tasty combination.
