
Soup with meatballs and tomato paste

To give the soup an even richer color, you can add a bit of boiled beetroot. As for the herbs, feel free to use your favorites: parsley, dill, cilantro, or spinach, for example. Serve with fresh herbs and sour cream.

1. First, wash the meat, dry it, and pass it through a meat grinder. If you want to save time, you can use ready-made ground meat for this soup recipe with meatballs and tomato paste. Add 1 onion and garlic to taste.

2. Add the egg, season with salt and pepper to taste. Wash and dry the herbs, chop them finely, and add to the meat mixture. Mix everything thoroughly.

3. Meanwhile, place a pot of water on the stove. After it comes to a boil, add the bay leaf and a little salt. With wet hands, shape small meatballs from the prepared minced mixture.

4. While the water is coming to a boil, peel and finely chop the second onion. Grate the carrot. Heat a little vegetable oil in a skillet and add the vegetables. Fry over medium heat, stirring occasionally. You can also add some herbs and garlic (for flavor).

5. Gently place the meatballs into the boiling water. After the water comes to a boil again, carefully skim off the foam with a slotted spoon and cook the meatballs over medium heat for about 5 minutes.
