
Soup with meatballs and spinach
Description
Perfect for lunch. I don't know why, but I also loved meatball soup as a child. This combination simply has a magical effect on a child's imagination. Especially when children help their mom shape the meatballs with their own hands. It's a shared activity and helps them understand what goes into the soup they'll be eating later.

Take a mixture of pork and beef mince. You can also use chicken, it's not crucial. Meatball soup is even made with fish. So choose the mince according to your taste.

Now chop the onion. Add part of it to the meat mixture, and set aside the rest for the soup. Add egg, salt, pepper, and herbs. Mix well, then shape into meatballs.

While the water is coming to a boil in the pot, chop the remaining vegetables. Cut the potatoes into cubes and the carrots into rounds. When the water boils, add the meatballs. Bring to a boil, then skim off the foam. Add the potatoes, carrots, peppercorns, bay leaf, and season with salt to taste.

After 15 minutes, chop the spinach and add it to the soup. It should be cooked for no more than five minutes, otherwise the vitamins will be destroyed by boiling water. Add the remaining onion, and you can also add garlic and green onion.
