
Soup with meatballs, mushrooms, and processed cheese
Description
The soup is easy and quick to prepare. A delicate, aromatic, and very tasty soup that will help diversify your everyday menu. You can make the meatballs from any ground meat, or if you're short on time or ingredients, feel free to use store-bought ones. You can use any mushrooms you like—I'm using button mushrooms today. This creamy cheesy soup with juicy meatballs will be loved by everyone, without exception.

Prepare all the ingredients. My minced meat already contains salt and spices. You can use any minced meat according to your taste.

Form small meatballs from the minced meat, slightly smaller than a walnut.

Peel the potatoes, cut them into cubes, transfer to a saucepan, and cover with water. Cook for about 20 minutes.

Meanwhile, heat oil in a skillet, add diced onion and grated carrot, and sauté the vegetables until soft. Then add sliced mushrooms and cook together for about another 5 minutes. You can add your favorite spices during cooking, as they will develop their aroma better.

Prepare the cheese, greens, and garlic.

When the potatoes are almost done, add the meatballs and cook for 10 minutes. Then add the contents of the skillet, cheese, mix and adjust the seasoning with salt. Cook for a couple more minutes, then stir in the chopped fresh herbs and garlic. Remove the pot from heat and let the soup steep, covered, for 10–15 minutes.
