
Soup with beans and pork
Description
The soup is easy and quick to prepare. This thick, hearty soup goes well with cornbread. Serve with fresh herbs and sour cream.

1. Soak the beans in 12 cups of water overnight, then drain. You can speed up the soaking process by pouring boiling water over the beans—then they'll be ready in just 1–2 hours. Cut the pork into small pieces. Chop the onion, bell pepper, red onion, and thyme. Heat a large soup pot over low heat. Add the chopped pork and cook until golden brown, for 4 to 5 minutes.

2. Add onion and bell pepper, cook until done, about 5 minutes.

3. Add the beans and chicken broth. Bring to a boil, reduce the heat to medium, and simmer for about 1 hour, partially covered and stirring occasionally, until the beans are fully cooked and the liquid is no longer translucent. Add 1-2 cups of water if needed, if the soup appears too thick.

4. When the beans are completely softened, season the soup well with salt and pepper, and add the chopped thyme. Continue cooking for a few more minutes. Serve the soup with sliced red onion and vinegar or hot sauce on the side.
