
Soup with beans and spinach
Description
The recipe won't take much time. This soup is more like a vegetable stew than our traditional first courses, but nevertheless, it's very tasty, very aromatic, and very healthy. This soup is especially good during the winter fasting period—it satisfies and warms you perfectly and is packed with beneficial nutrients. The soup is quick and quite easy to prepare. Be sure to make and try it—you won't regret it. The soup is ready to serve.

1. Heat vegetable oil in a saucepan and sauté the onion, cut into quarter rings, until translucent.

2. Add the carrot and celery, cut into half-rings and diced, respectively. Sauté for 3-4 minutes.

3. Add about half a cup of water or broth and cook over low heat, covered, until the vegetables are tender.

4. Peel the tomatoes, if necessary, and cut them into several pieces. Finely chop 2-3 garlic cloves and crush them with the side of a knife. We will need the beans without the liquid.

5. Add tomatoes and garlic to the pot. Season with salt and add the remaining amount of water or broth (it's better to use hot water). Cook for about 10-15 minutes.

6. Add the beans to the pot and cook for 2-3 minutes.

8. And now it's time for the spinach. You can chop it if you have very large leaves. Cook for about 4-5 minutes.

9. Meanwhile, prepare the bread. Dry and brown the slices in the oven or toaster, then rub them with garlic.

10. The soup turns out quite thick, not very similar to our traditional soups. If you prefer a thinner consistency, simply add water or broth.

11. And now the most interesting part - place slices of bread and a little bit of hot pepper into the soup plate.
