
Soup with homemade chicken and fried noodles
Description
The recipe won't take much time. Once you've made this soup, it will become your signature first course. I highly recommend using home-raised poultry (in this case, chicken). Potatoes are not added here, and the noodles must be baked in the oven. The finished soup turns out not only delicious but also very attractive. Serve the soup hot.

1. I was brought a chicken from the village. This recipe is for true meat lovers. So, prepare the bird: clean it, singe the feathers (if necessary), and place it whole into a large pot. If you're cooking for several people, use a smaller portion. If you don't have a home-raised chicken, it's no problem—use whatever you have. Of course, the taste of the soup made with a home-raised chicken is incomparable.

2. Add spices to taste. For me, this includes celery, herbs, spices, peppercorns, bay leaf, fresh herbs, etc. Use any spices you like. My husband loves spicy food, so I always cook the noodles with hot pepper. When the broth comes to a boil, add all the spices to taste, but don't forget to skim off the foam first.

3. If you think there's too much fat, you can skim it off. I used a 5.5-liter pot, so I used a whole chicken.

4. Simmer over low heat for at least 1.5 hours, and in the meantime you can prepare the noodles.

5. To prepare it, we will need flour and eggs. For a 5-liter pot, I use 2 small eggs. Add salt and as much flour as it takes.

6. If you don't have a special machine for making and cutting noodles, use a rolling pin and a knife. I have a special machine, so I prepare noodles with its help in 20 minutes.

7. Cut the noodles not too thick in width. Keep in mind that during baking the noodles will become even narrower.

8. Place the cut noodles on a baking sheet and put them in the preheated oven for 15 minutes. After that, let them cool completely. If there are leftovers, they can be stored in a sealed jar in a dark place until next time.

9. When the chicken is cooked, remove the bird, add the noodles and greens. Cook until the noodles are done (approximately 10 minutes), then turn off the heat and set aside.

10. Let the soup sit for about 15 minutes, then it's ready to serve. If you like to eat soup with meat on the side, serve it in portions or separately. I removed the meat, sliced it, and added it back into the soup along with the herbs and noodles.
