
Soup with bulgur and lentils
Description
Of course, you can prepare the soup with chicken or meat broth and add pieces of meat, but then it won't be a fasting version. You may add crushed cumin to the soup's sauté if you enjoy spices. I didn't add it, as I was cooking for children. In any case, the soup will be very, very delicious!

Prepare all the necessary ingredients. Wash and peel the vegetables.

Rinse the bulgur and lentils and place them in boiling water. Simmer for 20 minutes after boiling over low heat. Meanwhile, prepare the sauté.

Cut the onion, carrots, and peppers into small cubes. Peel the tomatoes and mash them with their juice using a fork. Sauté the onion, carrots, and peppers in vegetable oil. Add the tomatoes last and simmer for 2–3 minutes. Add cumin if desired.

After the bulgur and lentils are cooked, add the sautéed mixture to the soup, season with salt to taste, and simmer for a few more minutes. For flavor balance, you can add a pinch of sugar. Then turn off the heat and let the soup steep for 20–30 minutes so it can absorb all the flavors and aromas.
