
Broccoli and Cheddar Cheese Soup
Description
The recipe won't take much time. This recipe yields 2 liters of soup. It's so thick that a spoon can stand upright in it. The incredibly tender, creamy flavor of this dish will warm you up on cold evenings. To surprise your family, serve the soup in a bowl made from a loaf of bread.

1. Steam the broccoli until tender, cool, and blend in a blender or food processor until smooth to form a purée.

2. Melt the butter in a large saucepan. Add the chopped onion and sauté over low heat for 5 minutes. Stir in the flour and cook, stirring, for 3 minutes.

3. Slowly pour in the milk, cream, and meat broth, stirring until smooth. Bring to a boil, stirring constantly.

4. Add broccoli and two types of grated Cheddar cheese.

5. Continue stirring until the cheese has completely melted. Add salt and black pepper to taste. The longer this soup sits, the thicker it becomes.
