
Bean soup
Description
A hearty first course. I once came across a simple recipe for bean soup. I prepared it in half an hour. The soup turned out fresh and very tasty. My nephews really liked the bean soup. And if kids love it, then it's a pass. Serve with fresh herbs and sour cream.

1. Mash the canned tomatoes with a fork or by hand. It is best if they are skinless. If any skin is present, remove it.

2. Peel the onion and garlic. Cut the onion into small cubes. Mince the garlic.

3. In a pot where the soup will be cooked (at least two liters), heat vegetable oil (you can use a mixture of vegetable and butter). Place over medium heat.

4. Place the chopped onion and garlic, oregano (marjoram) into a saucepan with oil. Sauté for three minutes until softened, stirring constantly.

5. Add the chopped tomatoes in their own juice, broth, and pepper. Mix well and increase the cooking temperature. When the soup comes to a boil, reduce the heat to medium. If you don't have broth, you can use a ready-made bouillon cube and hot boiled water.

6. Simmer the soup for 20 minutes, then add the canned beans and pasta. Cook for as many minutes as indicated on the pasta package. Or better—taste it. It's best to use small pasta, such as shells.

7. Salt and pepper the soup. You can add fresh basil leaves.

8. At the end of cooking, rinse the parsley, chop it, and add to the soup. Turn off the heat, cover with a lid, and let it steep for a few more minutes. Serve the bean soup with your favorite bread or croutons.
