
Crayfish soup

Bring water to boil in a pot for cooking crayfish. Add salt, spices, one onion, and a stem of fresh dill. As soon as the water boils, add the cleaned and gutted crayfish to the pot. Cook for 15–20 minutes. 2. Peel the potatoes and carrots. Cut into cubes. 3. Remove the cooked crayfish from the broth. Strain the broth. Pour about one cup of the broth into a smaller saucepan—for cooking the carrots. Discard the onion. 4. Add all the vegetables (except carrots) to the remaining crayfish broth and cook until tender. Add spices and finely chopped garlic. Cook the carrots separately. 5. Blend the soup with a blender. Also blend the carrots with their cooking liquid until smooth and pureed. 6. When serving, first pour the main vegetable puree into bowls, place the carrot puree in the center, and a spoonful of sour cream right in the middle. Add one crayfish to each bowl and garnish with a sprig of mint or dill. The soup is ready to serve.
