
Potato puree soup with bacon

In a saucepan, sauté small pieces of bacon over medium heat until the fat renders. Transfer the crispy bacon pieces to a plate. Do not discard all the fat from the saucepan, as it is needed for sautéing the vegetables.

Dice the vegetables: carrots, onion, celery, and potatoes. First, sauté the first three ingredients, then add the potatoes to the pot after a couple of minutes. Sauté for another 5 minutes, remembering to season the vegetables with salt and pepper to taste.

Pour the broth into a saucepan and bring to a boil. Continue cooking over low heat for another 10 minutes, until the potatoes become tender.

Mix the flour with milk and pour into the saucepan. Simmer for another 5 minutes.

Pour 2/3 of the soup into another pot and use a blender to puree until smooth. Then pour it back into the pot and mix well. Don't forget to taste and season with your favorite spices.
