Prepare all the ingredients.

Finely chop the onion into small cubes, grate the carrot on a coarse grater. Sauté the vegetables in a heavy-bottomed pot until golden brown.

Add diced pickled cucumbers and canned tomatoes in their own juice. Simmer for 5 minutes, covered.

Add the sliced mushrooms and simmer for another 5-7 minutes.

Then add the diced potatoes, bell pepper, and zucchini.

Pour in hot water and bring to a boil. Add salt, pepper, and smoked paprika. Simmer the soup for 5 minutes.

Add the sauerkraut and olives. Bring the soup back to a boil and cook for 10 minutes.
