
Pork broth soup
Description
Perfect for lunch. To taste, you can add half a teaspoon of sugar to the soup, which will give it a pleasant sweetness. In addition to parsley, you can also add chopped dill to the soup. If you'd like to make the soup especially filling, you can include pieces of meat that were boiled in the broth. Serve hot with thick sour cream and aromatic black bread.

Step 1

Pour 1.5 liters of water into a saucepan and add the pork. Place the saucepan over medium heat and bring the water to a boil. Skim off the foam with a skimmer as it forms. Reduce the heat to the lowest setting and simmer the broth until the pork is fully cooked.

Peel the potatoes and cut them into small cubes. Since potatoes take longer to cook than the other vegetables, add them to the prepared broth and start boiling, slightly salting the water. Meanwhile, prepare the other ingredients.

Peel the remaining vegetables: carrots, zucchini, and onion. Finely chop the zucchini and onion, and grate the carrots on a coarse grater. Pour a little vegetable oil into a frying pan and sauté the vegetables for about 5–8 minutes.

Add the fried vegetables together with the oil they were fried in to the broth. Also add tomato paste, bay leaf, and pepper to the pot. Chop parsley, add it to the soup. Simmer for another 10 minutes, then serve the soup, ladling it into bowls.
