
Vegetable broth soup
Description
Perfect for lunch. Serve with herbs and sour cream.

1. First, gather the vegetables for the broth: onion, carrot, celery stalk, and celery root, etc. For flavor, you can add bay leaf, herbs, or your favorite spices.

2. Pour in clean water and place the pot over heat. Once it comes to a boil, reduce the heat to medium and simmer for about half an hour. I don't salt the broth, but you can add a pinch if desired.

3. Meanwhile, you can prepare the other soup ingredients. Thinly slice the leek and place it in a pot with a small amount of butter. Start sautéing.

4. Peel and chop the potatoes, carrots, and celery. Add them to the pan and continue frying for another 5 minutes.

5. Carefully strain the ready broth.

6. Pour into the pot with the sautéed vegetables. Add salt to taste.

7. Cook for about 7-10 minutes. Then add the beans to the pot along with a little tomato sauce (for a more appealing color) or tomatoes blended into a puree.

8. After another 10 minutes, add the remaining vegetables: corn kernels, diced zucchini, and garlic pressed through a garlic press. After 5 minutes, remove the pot from the heat.

9. Let the soup sit for about 10 minutes before serving. For extra flavor, you can add a little lemon juice or ground pepper, for example.
