
Bone broth soup
Description
The recipe won't take much time. You can prepare bone broth soup with noodles, any grain, or simply fresh seasonal vegetables. Today I have a very tasty and simple homemade version with egg noodles. Bone broth contains important amino acids for the body, and its main component is beneficial collagen. Bone broth is especially beneficial for those with joint problems, gastrointestinal issues, or recovering from fractures, as it is rich in calcium. The soup is ready to serve.

Step 1

Prepare all the ingredients. To make bone broth, you'll need bones (pork, lamb, or beef). Ideally, use bones with some meat on them. I'm using a pork bone.

Rinse the bones under cold water and place them in a pot. Add a thoroughly washed unpeeled onion, sliced carrots, bay leaf, and whole peppercorns. Pour in water, place on the stove, and bring to a boil. Skim off the foam with a ladle, then reduce the heat to maintain a gentle simmer, avoiding vigorous boiling. Beef and lamb bones should be simmered for about 4–4.5 hours, while veal and pork bones require 2–3 hours.

Meanwhile, prepare the remaining ingredients. Cut the potatoes into cubes.

Sauté grated carrots and diced onion in a pan with spices (this will help the spices release their aroma better).

Chop the herbs with a knife. Measure out the required amount of noodles or grain, if you are cooking with them.

When the broth is ready, it should be strained and returned back to the pot.

Remove the meat from the bones and add it to the broth. Bring the strained broth with the meat back to a boil.

Add the potatoes and sautéed vegetables, and cook until the potatoes are tender. Three to five minutes before the end of cooking, add the noodles and salt to taste. Then stir in the fresh herbs. The bone broth soup is ready. Let it stand for 10–15 minutes, then serve.
