
Beef rib soup
Description
A hearty first course. Soup made with beef ribs is nutritious food; the main thing is to cook the meat thoroughly so it becomes tender. To enhance the soup's flavor, you can add bouillon cubes. Plantain is a vegetable banana; it can be substituted with a regular green banana, but add it at the end of cooking so it doesn't overcook. Instead of bread, boiled rice is served with this soup. Separate the beef ribs and meat into convenient pieces, rinse, and immerse in boiling water for 10 minutes. Drain the water and thoroughly rinse the meat under cold running water.

Place the prepared beef ribs and chopped onion into a clean pot, pour in 3 liters of cold water, and bring to a boil. Reduce the heat and simmer for 40 minutes.

Add the beef meat, bring the broth to a boil again, reduce the heat, and simmer for 1.5 hours.

Add the sliced potatoes and plantains to the broth. Simmer over low heat for 10–15 minutes, until the vegetables are cooked.

Add the Napa cabbage, cut into 4 pieces, to the soup. Pour in fish sauce, and season with salt and pepper to taste. Cook the soup for another 2 minutes, until the cabbage leaves become tender.
