
Clam chowder soup
Description
Hearty first course. I'll show you a great way to prepare it. Serve with fresh herbs and sour cream.

1. Wash the mollusks thoroughly and soak them in salted water for about an hour. Rinse them again and remove any damaged ones, if present. Cover the mollusks with water and place over heat. Cook for about 5–10 minutes, until they open up.

2. Clean the mollusks, saving the broth.

3. Pour a little oil into a saucepan and add the diced fatback.

4. If the fat is too fatty, there's no need to add oil! Fry it until golden brown.

5. Add the chopped onion and sauté for 5-6 minutes, stirring.

6. Add the flour, mix well.

7. Pour in the wine.

8. Then pour in a glass of water and a couple of glasses of broth. Bring to a boil, add the finely chopped potatoes and spices. Cook for about 10–15 minutes until the potatoes are tender.

9. Separately warm the cream and slowly pour it into the soup in a thin stream. Add the shellfish and remove from heat. The clam chowder is ready.
