Description

A hearty first course. Here is a recipe for "Kapustnyak" soup, and I'm sure you'll love it just as much as I did back in the day! Delicious, filling, and wonderfully homey. This is my dad's favorite soup, which is why my mom makes it very often. As I grew older, I realized it's also a very economical recipe—enough to last a long time and quite inexpensive. The soup is ready to serve.

    1. Place the meat and one peeled onion, cut in half, in water, bring to a boil. When foam forms, skim it off and add spices. Simmer over low heat until the broth is ready.

    2. Finely chop the carrot and the remaining onion, then sauté in vegetable oil. Add flour and tomato paste, and continue sautéing until cooked through and the paste darkens slightly.

    3. When the broth is ready, remove the meat and set it aside to cool. In its place, add the grain and cook for about 10 minutes. Then add the mixture from the skillet and the shredded cabbage. Simmer everything over low heat.

    4. Cut the cooled meat into pieces and return it to the soup. Also add spices and herbs to taste.

    5. I added green onions. Cook until done, then turn off the heat and let it steep, covered, for at least 20 more minutes.
