
Pea soup with mint

A hearty first course. This pea soup with mint is very quick to prepare. Many may think these ingredients don't go well together, but that's not the case. The combination of mint, peas, cream, and butter is actually quite suitable, although this soup is definitely a matter of personal taste. It's best prepared in summer using fresh ingredients. The soup is ready to serve.

1. Minimal ingredients—and you'll have a light summer soup with green peas and mint on your table. It's best to prepare it using fresh young peas (or frozen ones).

2. Note that you control the soup's thickness yourself. If you prefer a thicker consistency, add just enough water to cover the peas. Mix the peas and mint, season with salt to taste. Then add water and place on the stove. Bring to a boil and cook until the peas are tender.

3. When the ingredients are cooked, transfer them to a blender. I like a thick cream soup, so I add the pulp and adjust the consistency with cream.

4. Add the cream and butter, and begin beating until smooth and puréed.
